Tenoch by Paradero
Tenoch is contemporary Mexican at Paradero Todos Santos (La Mesa km 59, Degollado) — a dirt road past pepper fields to an open-air hotel kitchen. Michelin says the cooking is serious: farm produce and local seafood. Inspectors highlight a deceptively simple soft-shell crab taco, slow-roasted beef tongue, manchamantel mole, a chocolate taco with black-garlic panna cotta, and dramatic “French toast.” Selected in the 2026 Guide — not a star.
