LÍMO Heritage Kitchen at Suelo Sur (San José del Cabo) is chef Guillermo J. Gómez’s open-fire, farm-to-table room. The official site says the menu draws on Baja traditions and vaquero/gaucho fire cooking, with local meats, fire-roasted vegetables and foraged herbs.
