Dūm / DŪM
DŪM is a Mexican restaurant in Centro Todos Santos (C. Centenario). Michelin: follow the carved-wood sign through a jungle-like path to an oasis room run by chef Aurélien Legeay and Paulina Noble. The menu changes every new moon, with à la carte plus “new moon” and “full moon” tastings. Inspectors call the cooking playful — oxtail with smoked carrot, potato ravioli with smoked mackerel. Selected 2026 — not a star.
