CarbónCabrón is a contemporary live-fire restaurant in San José del Cabo (Blvd. Cerro Colorado / México 1 km 24.5). Michelin names chef Poncho Cadena and a moody, mesquite-stacked room: vegetables, seafood, and “black market” meats (tongue, sweetbreads) for sharing, plus a chef’s tasting. Inspectors flag charcoal-tempura onion petals with habanero aïoli and tail-on shrimp over pork belly. Selected in the Michelin Guide 2026 — not a star.
