Chef José Lazcarro, born and trained in Puebla, brings his expertise and roots to Pitahayas restaurant—located oceanfront at Hacienda del Mar Los Cabos—offering the authentic ingredients, techniques, and respect for tradition that define Mexico’s most iconic dish. A three-course tasting menu featuring Chalupas as an appetizer, Chef José Lazcarro’s signature *Chile en Nogada* as the main course, and a delicious corn cake for dessert, accompanied by Papantla vanilla ice cream with totomoxtle (corn husk) infusion.
